Iglesia Vella is a flagship cuvée of the estate and a pure expression of the Gallet style, driven by old-vine Grenache Gris planted in 1954 on schist. On the palate, it is long, precise and crystalline, almost Chablis-like in its tension and clarity. Subtle notes of almond, acacia, nuts and warm schist unfold quietly, giving a wine that feels both focused and meditative. Farming has followed organic principles since 2008 and biodynamics since 2011, with minimal inputs and meticulous handwork from pruning through to harvest. Each parcel is treated individually, in tune with nature’s rhythm and the life of the soil. In the cellar, the approach is firmly low‑intervention: native yeasts, no new oak, no temperature control, no corrections, no enzymes, no fining.
