Description
Saburin is one of nine named hillside sites in Brouilly, tucked between Odenas and Quincié-en-Beaujolais on a south-facing slope. Nicolas’ parcel sits at 350 metres, oriented south/south-east, on steep terrain dominated by pink granite — a soil that lends precision and grip to the wine.
The vines are densely planted and trained in the traditional gobelet style. In the cellar, whole clusters are fermented with indigenous yeasts and no SO2 addition, with a 15-day maceration. The wine then rests on its fine lees through winter into spring. It is bottled unfined and unfiltered, with a small dose of SO2 added just before bottling — timed, as is Nicolas’ custom, to the waning moon.
