Description

Take a licorice allsorts mix of merlot, shiraz, pinot noir, malbec and cabernet sauvignon, pop it into large used French barrels and leave it on lees for 11 months, and the result is a textural, uber-delicious drink with an enticing hue the colour of Campari mixed with Aperol. Pops of spiced raspberries and cranberries, pomegranate and watermelon rind, alpine herbs and sumac. There’s a fine layer of creamy lees and tannins adding depth, texture and shape as the soft acidity gently pulls this to a long finish.
