Description
Sourced from four prestigious terroirs — Grand Cru villages Ambonnay, Bouzy, and Louvois, alongside Premier Cru Tauxières — this blanc de noirs-dominant blend of 73% Pinot Noir and 27% Chardonnay is built largely on the excellent 2020 vintage. Hand-harvested at peak maturity and double-sorted, the grapes are gently pressed and aged 17–20 months on fine lees in 228L Burgundy barrels, with malolactic fermentation completing naturally. Unfined, unfiltered, and released without dosage, it expresses a controlled oxidative character reminiscent of great white Burgundy — rich and luxurious, with spiced autumn fruit and a subtle thread of new oak on the finish.
Grower Georges Rémy tends 4.7 hectares across 17 parcels using certified organic practices, crafting his own compost alongside fellow Bouzy producers. A grower of real conviction, he is among the last to harvest — waiting until 11.5–12° potential alcohol to ensure full physiological ripeness.
