Anthony Femia began his journey in September 2015 with a humble antique French food cart at Prahran Market, offering just two things: Swiss Raclette over kipflers and his famous All American Grilled Cheese Toasted Sandwich

In June 2019, Anthony realised a long-held vision and opened The Chapel of Cheese — a fully dedicated cheese destination at Prahran Market. The shop features a purpose-built maturation room, a seven-metre climate-controlled cheese counter, and a kitchen that serves not only those legendary toasties but a rotating selection of seasonal cheese dishes made with the finest produce from the market around us.

Anthony regularly travels overseas on what he calls “wandering cheesemonger” trips, sourcing cheeses available exclusively at our shop. In March 2018, he became the first Australian cheesemonger ever invited to visit Marcel Petite in the Jura mountains of France — to select their very own flavour profile of Comté. This honour has historically been reserved for the finest cheesemongers of France, the UK, and the USA.
