Description
The vintage was a hot one from 15 April until harvest, with scorching, sweltering periods. Despite this, the vines were able to withstand the heat and, thanks to the saving rains at the end of June, were able to bring their fruit to a good level of ripeness for an early harvest that began on 21 August. A sunny vintage, then, but with a different profile to the 2020 vintage, with more aromatic freshness, less alcohol and the very fine acid balance we love! The Pinots offer gourmet aromas, with a full, powerful palate, accompanied by noble-grained tannins. This is a vintage whose juiciness can be appreciated young and which will express all its richness with age.
We aply common sens or « farmer ‘s sens » in our day to day viticulture practices. We work towards health balance of our vines, to preserve our soils and the direct environment of our parcels.
We allow for natural grass cover across our parcels with minimal mecanical intervention.
Our pruning methods aims at respecting sap flows avoigind pruning wounds ;
Bud selection to regulate yields, green harvest only when necessary ;
Copper and Sulfur treatments and a few plant based infusions ;
No herbicides, no pesticides ;
Manuel harvest at the right maturity : we aim for optimum aromatic potential and optimum acidity ;Sorting is done directly at the parcel.
100% destemmed ;
Spontaneous fermentation with indegenous yeasts with temperature control and limited oxygen ;
15 days of maceration in horizontal vats with automatic « pigeage » system ;
12 months oak barrel ageing with a proportion of 35 to 50% new oak depending on the vintage, the rest in one year old barrels ;
Natural malolactique fermentation, no racking ;
Barrels are blended 2 months before bottling, no fining, light filtration
