Harvested on September 5th in Comblanchien. – 100% Pinot Noir – Vines about 35 years old – Manual harvesting in small crates – Whole bunch vinification without inputs – 10 months of ageing in oak barrels I did a semi-carbonic maceration of about 20 days with some light pumping over and 2 foot treading to extract the color. You could almost call it an infusion. The result is a wine where you can really feel the terroir of Nuits Saint Georges. Very delicate with a nice tension on the finish. – Bottles: 900 Maxime Crotet is a brand newcomer to the world of wine since it markets its very first vintage in 2022, which it vinified in 2021. Maxime Crotet is a pure Burgundian who was immersed in the world of wine and gastronomy during his childhood. From an early age, he was interested in this world and more particularly in the different methods of vinification. He began his training with Frédéric Cossard, winegrower in Saint-Romain for almost 10 years. There he learned the management of the vines in organic farming, as well as the methods of natural vinification, with breeding without sulphur. Convinced of this viticulture and vinification method that respects the environment, the product and the terroir, he decided to start his own business and vinify his own wines in Beaune. To start, he brought organic grapes from the Rhône Valley and the Jura back to his winery. The harvests of red Burgundy being unfortunately very low in 2021, he could only produce a few Pinot Noir from the Côtes de Nuits. Building on his success in his first year, he intends to expand his trade next year, especially by offering more Burgundy. Maxime Crotet is one of the rising stars of natural wines from Burgundy and France.
