Description
Terroir
The fruit for the 2025 Pétillant Naturel Riesling is
sourced from maritime, cool climate Mount Gambier.
The soil profile is dominated by metamorphosed
limestone. The vineyard is organically managed by
viticulturists Mary and Guy Stratford.
A very dry season in Mt Gambier in 2025, and despite a
warmer vintage across the Eastern Coast, temperatures
in Mt Gambier were average and contributed to a slow,
cool ripening.
Grapes picked on the 20th of March (2 weeks later than
2024) at 11 Baumé. Light pressing, all free run juice.
Juice treated oxidatively. Fermented in aged french oak.
Matured on gross lees for 5 months, then secondary
fermentation in bottle until dry. No disgorging.
Tasting notes
Pink grapefruit, seed kernels and green mango on the
nose, that open up to wet slate with a hint of tangerine.
Tart apple, grapefruit and subtle yellowbox honey
characters on the front palate, with lingering brioche
on the back palate. Zippy acid, with a lovely rounded
texture from effervescence and balanced phenolics.
Fresh, clean and dry.
